In Saint Barthélemy, gastronomy is an essential part of island life. Blending French influences, fresh seafood, spices, and inspiration from around the world, the island's restaurants have developed a distinctive culinary identity. Each year, the Saint-Barth Gourmet Festival celebrates this rich heritage by bringing together renowned chefs for unique collaborations and original creations.
From November 9 to 15, 2026, the 13th edition of the Saint-Barth Gourmet Festival invites food lovers to discover the island through its restaurants and culinary talents. Among the participating venues, Hotel Manapany welcomes chef Thibaut Sombardier, who will join resident chef Misel Bayrakcioglu for four gastronomic evenings, from November 11 to 14.

A MEETING OF CHEFS AND CULINARY TRADITIONS
Organized by the Saint Barthélemy Tourism Committee, the Gourmet Festival has become one of the island's most anticipated culinary events.
The concept is simple: renowned chefs are invited to take over the kitchens of local establishments, working alongside resident teams to create exclusive menus for the occasion. These collaborations bring together different techniques, perspectives, and culinary influences, offering a new way to experience Saint Barth.
For the 2026 edition, 14 guest chefs will come together across 12 establishments, from the lively streets of Gustavia to the island's more intimate addresses. Participating chefs include David Toutain, Cyril Lignac, Claire Heitzler, Amaury Bouhours, and Thibaut Sombardier.

Beyond the dinners themselves, the festival celebrates the art of sharing knowledge and the simple pleasure of gathering around a table. THE GOURMET FESTIVAL AT MANAPANY
Four evenings with Thibaut Sombardier
A CULINARY COLLABORATION BETWEEN TWO CHEFS
From November 11 to 14, 2026, the restaurant at Hotel Manapany will host a special collaboration between Thibaut Sombardier and resident chef Misel Bayrakcioglu.
Together, they will present a series of creative dinners featuring a BBQ-inspired menu, where flame-grilled preparations, aromatic spices, and contrasting textures take center stage.
Located directly on the shores of Anse des Cayes, Manapany provides a beautiful setting for this culinary experience. As daylight fades, the gentle sounds of the ocean accompany conversations, inviting guests to linger over a thoughtfully crafted dinner designed around the pleasure of discovery.
A GASTRONOMIC MENU WITH BBQ-INSPIRED FLAVORS
The three-course menu features a selection of creative dishes, with guests invited to choose between two options for each course.
Dinner begins with fresh, delicate flavors, featuring thinly sliced raw yellowfin tuna with a Thai basil velouté, or lobster medallions and ravioli served in a fragrant coconut and lime broth.
For the main course, guests can choose between grilled mahi-mahi with a lemon and chili sabayon, wilted baby spinach, lemon-infused couscous, and confit peppers, or Wagyu beef picanha complemented by sweet onions with sesame, roasted coffee oil, and black garlic mustard.
To finish on an indulgent note, dessert offers a choice between warm chocolate and praline mousse with buckwheat ice cream, or floating island with caramelized pecans, served with a rich vanilla custard and milk caramel.
